Southwestern Chicken Salad

A delicious and refreshing Southwestern Chicken Salad featuring juicy chicken and crispy turkey bacon.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup turkey bacon, cooked and crumbled
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup red onion, diced
  • 1 cup romaine lettuce, chopped
  • 1/4 cup cilantro, chopped
  • 1/3 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • salt to taste

Instructions

  1. In a large bowl, combine the shredded chicken, turkey bacon, black beans, corn, cherry tomatoes, avocado, red onion, and romaine lettuce.
  2. In a small bowl, whisk together the lime juice, olive oil, cumin, chili powder, and salt.
  3. Pour the dressing over the salad and toss to combine.
  4. Garnish with chopped cilantro before serving.
