  • 1 pound boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup shredded cheese

Instructions

  1. Place chicken in the crock pot.
  2. Pour in the chicken broth, followed by the salsa and taco seasoning.
  3. Add rice, black beans, and corn, stir to combine.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. 15 minutes before serving, add shredded cheese on top.

Notes

  • For extra flavor, marinate the chicken in salsa for an hour before cooking.
  • Can substitute brown rice but may require longer cooking time.
