- 1 teaspoon baking soda

- 3/4 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 1/4 cup molasses
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar, for coating
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt.
- In another bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg, molasses, and vanilla extract to the wet ingredients and mix until well combined.
- Gradually stir the dry ingredients into the wet mixture until just combined.
- Scoop tablespoon-sized portions of dough, roll them into balls, and then roll them in powdered sugar.
- Place the coated dough balls on the prepared baking sheet, leaving space for spreading.
