Smothered Chicken and Rice

Enjoy a hearty meal with Smothered Chicken and Rice featuring flavorful turkey bacon.

Ingredients

  • 4 chicken thighs
  • 2 cups rice
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon olive oil

Instructions

  1. Cook turkey bacon in a large skillet over medium heat until crispy. Remove and set aside.
  2. In the same skillet, add olive oil, then the chicken thighs. Brown on both sides, about 5 minutes.
  3. Add onion and garlic, sauté until soft.
  4. Stir in rice, chicken broth, paprika, black pepper, and salt.
  5. Bring to a boil, then reduce heat, cover and simmer for 20 minutes.
  6. Once cooked, flake turkey bacon and mix back into the chicken and rice before serving.

Notes

  • For a spicier kick, add cayenne pepper.
  • Let leftovers cool completely before storing.
