Slow Cooker Garlic Parmesan Chicken and Potatoes

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • ½ cup grated parmesan cheese
  • 2 pounds small Yukon gold potatoes, halved
  • ¼ cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Place the potatoes at the bottom of the slow cooker.
  2. Season the chicken breasts with garlic powder, salt, and pepper.
  3. Place the seasoned chicken on top of the potatoes.
  4. Pour the chicken broth and olive oil over the chicken and potatoes.
  5. Sprinkle the parmesan cheese on top.
  6. Cover and cook on low for 6-7 hours or until the chicken is cooked through.
  7. Garnish with fresh parsley before serving.

Notes

  • You can substitute the Yukon gold potatoes for baby potatoes if preferred.
  • For crispy chicken, broil for a few minutes after slow cooking.
