  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup tortilla chips, for serving
  • 1/2 cup shredded cheese, for garnish
  • 1/4 cup fresh cilantro, chopped, for garnish
  • 1 lime, cut into wedges, for serving

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add black beans, corn, diced tomatoes, onion, garlic, chicken broth, chili powder, cumin, salt, black pepper, and cayenne pepper.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Once cooked, shred the chicken with two forks and return it to the soup.
  5. Serve hot, topped with tortilla chips, shredded cheese, cilantro, and lime wedges.
