  • 1 pound dried red beans
  • 4 slices turkey bacon
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 teaspoons Cajun seasoning
  • 6 cups chicken broth
  • 1 cup long-grain rice
  • 2 green onions, sliced
  • Salt to taste

Instructions

  1. Rinse the beans and soak them overnight.
  2. In a slow cooker, add turkey bacon, onion, garlic, and bell pepper.
  3. Add the soaked beans, Cajun seasoning, and chicken broth.
  4. Cover and cook on low for 6-8 hours.
  5. About 30 minutes before serving, stir in the rice.
  6. Garnish with green onions before serving.

Notes

  • Feel free to adjust the seasoning to your taste.
  • This recipe can be made vegetarian by omitting the bacon.
