Slow Cooker Cajun Red Beans and Rice

A delicious and hearty Slow Cooker Cajun Red Beans and Rice recipe featuring turkey bacon for a healthier twist.

  • 1 pound dry red beans
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 bay leaf
  • 1 cup white rice

Instructions

  1. Rinse and soak the red beans overnight.
  2. In a slow cooker, cook the turkey bacon until crispy; remove and chop.
  3. Add the chopped vegetables and garlic to the slow cooker and sauté for a few minutes.
  4. Add the soaked beans, broth, seasonings, and bay leaf to the slow cooker.
  5. Cook on low for 6-8 hours or until beans are tender.
  6. Stir in the rice and cook for an additional 30 minutes on high.
  7. Remove the bay leaf before serving.

Notes

  • For extra heat, add cayenne pepper to taste.
