- 2 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 teaspoon Worcestershire sauce
- 2 bay leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 whole carrots, chopped
- 3 stalks celery, chopped
- 1 can diced tomatoes (14.5 ounces)
- Season the beef with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the beef on all sides until browned.
