  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 whole carrots, chopped
  • 3 stalks celery, chopped
  • 1 can diced tomatoes (14.5 ounces)

Instructions

  1. Season the beef with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the beef on all sides until browned.
  3. Transfer the beef to the slow cooker. Add onions, garlic, broth, Worcestershire sauce, bay leaves, carrots, celery, and tomatoes.
  4. Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
  5. Remove the bay leaves and shred the beef with two forks before serving.
