  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1 large egg yolk

Instructions

  1. In a large bowl, cream together the butter, granulated sugar, and powdered sugar until light and fluffy.
  2. Add the egg yolk, vanilla, and almond extracts, and mix until well combined.
  3. Gradually blend in the flour and salt until the dough comes together.
  4. Divide the dough in half and shape each half into a log. Wrap in plastic wrap and refrigerate until firm.
  5. Preheat oven to 350°F (175°C).
  6. Slice the chilled dough into 1/4 inch thick rounds and place them on a baking sheet.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
