Sick Day Italian Penicillin Soup

A comforting and hearty soup perfect for recovery on a sick day.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 cup pasta
  • 2 cups shredded cooked chicken
  • 1 cup chopped spinach
  • salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, cooking until softened.
  3. Stir in the carrots and celery, cooking for another 5 minutes.
  4. Pour in the chicken broth and add thyme and oregano.
  5. Bring the mixture to a boil, then add the pasta and cook according to package instructions.
  6. Mix in the cooked chicken and spinach, cooking until heated through.
  7. Season with salt and pepper to taste before serving.

Notes

  • Can be made ahead and stored in the fridge.
  • Add more vegetables or legumes for variation.
