  • 4 large potatoes
  • 1 pound ground beef
  • 1 cup frozen peas and carrots
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes, then bake for 1 hour.
  3. While potatoes are baking, brown the ground beef with onions and garlic in a skillet.
  4. Add the peas, carrots, beef broth, Worcestershire sauce, salt, and pepper. Simmer for 10 minutes.
  5. Once baked, let the potatoes cool slightly. Cut them in half and scoop out the insides into a bowl.
  6. Mix the potato insides with sour cream and half of the cheddar cheese.
  7. Fill the potato skins with the beef mixture, then top with the potato mixture.
  8. Sprinkle the remaining cheese on top and return to the oven for 15-20 minutes.
  9. Serve warm and enjoy!

  • This dish can be made ahead of time and stored in the fridge.
  • Feel free to add other vegetables like corn or bell peppers.
