- 1 pound butternut squash, peeled and diced
- 2 cups vegetable broth
- 1 cup gnocchi
- 4 slices turkey bacon
- 1 cup onions, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 cup heavy cream
- Salt to taste
- Pepper to taste
- In a large pot, sauté turkey bacon until crispy. Remove and chop into pieces.
- Add onions and garlic to the pot, cooking until translucent.
- Stir in diced butternut squash and broth; bring to a boil.
- Add gnocchi, thyme, and rosemary; simmer until squash is tender.
- Blend the mixture until smooth and return to pot.
