Savory Butternut Squash Gnocchi Soup

  • 1 pound butternut squash, peeled and diced
  • 2 cups vegetable broth
  • 1 cup gnocchi
  • 4 slices turkey bacon
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, sauté turkey bacon until crispy. Remove and chop into pieces.
  2. Add onions and garlic to the pot, cooking until translucent.
  3. Stir in diced butternut squash and broth; bring to a boil.
  4. Add gnocchi, thyme, and rosemary; simmer until squash is tender.
  5. Blend the mixture until smooth and return to pot.
  6. Stir in heavy cream and season with salt and pepper.
  7. Top with chopped turkey bacon before serving.

Notes

  • For a vegan version, substitute turkey bacon with tempeh and use coconut cream instead of heavy cream.
  • This soup can be made ahead and stored for quick lunches through the week.
