  • 2 cups vegetable broth
  • 1 cup gnocchi
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon nutmeg
  • 1 cup spinach, chopped
  • 1/2 cup heavy cream

Instructions

  1. Peel and cube the butternut squash.
  2. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until soft.
  3. Add the cubed squash, vegetable broth, salt, pepper, and thyme. Bring to a boil.
  4. Reduce heat and let simmer until the squash is tender.
  5. Add the gnocchi and cook according to package instructions.
  6. Stir in cream and spinach, mixing until combined.
  7. Serve hot, garnished with additional thyme if desired.

  • For a vegan version, omit the cream or use coconut milk.
