  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1 cup shredded coconut, toasted
  • 1 cup caramel sauce
  • 1/2 cup chocolate syrup

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a cupcake tin with liners.
  2. In a bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter and add eggs and vanilla. Mix well.
  4. Add the dry ingredients alternately with the buttermilk to the wet mixture and stir until combined.
  5. Fold in the toasted coconut.
  6. Fill each cupcake liner about two-thirds full with the batter.
  7. Bake for 20-22 minutes or until a toothpick comes out clean.
  8. Allow the cupcakes to cool completely on a wire rack.
  9. Once cooled, drizzle caramel sauce on top and sprinkle with additional toasted coconut.
  10. Finish with a drizzle of chocolate syrup on top.

Notes

  • For best results, use room temperature ingredients.
