Roasted Tomato and Garlic Ricotta Pasta

A deliciously creamy pasta dish featuring roasted tomatoes and garlic, combined with ricotta for a comforting meal.

Ingredients

  • 2 cups cherry tomatoes
  • 4 cloves garlic
  • 1 pound pasta of choice
  • 1 cup ricotta cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, toss cherry tomatoes and garlic with olive oil, salt, and pepper. Roast for 20-25 minutes.
  3. Cook pasta according to package instructions. Drain and reserve some pasta water.
  4. In a large bowl, combine roasted tomatoes (and garlic), ricotta, and pasta. Mix well, adding reserved pasta water as needed.
  5. Stir in basil and parmesan cheese.
  6. Season with additional salt and pepper if needed. Serve warm.

Notes

  • Feel free to add other vegetables like spinach or zucchini.
  • This dish can be made with gluten-free pasta as well.
