- 2 cups cherry tomatoes
- 4 cloves garlic
- 1 pound pasta of choice
- 1 cup ricotta cheese
- 1/4 cup fresh basil, chopped
- 1/4 cup grated parmesan cheese
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- Preheat the oven to 400°F (200°C).
- On a baking sheet, toss cherry tomatoes and garlic with olive oil, salt, and pepper. Roast for 20-25 minutes.
- Cook pasta according to package instructions. Drain and reserve some pasta water.
- In a large bowl, combine roasted tomatoes (and garlic), ricotta, and pasta. Mix well, adding reserved pasta water as needed.
- Stir in basil and parmesan cheese.
- Season with additional salt and pepper if needed. Serve warm.
Notes
- Feel free to add other vegetables like spinach or zucchini.
- This dish can be made with gluten-free pasta as well.
