1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1/2 cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
2 teaspoons red food coloring
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup cream cheese, softened
1 cup powdered sugar
Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, cream the butter and sugar together until light and fluffy.
Add the egg, vanilla extract, and red food coloring to the mixture and continue to mix until well combined.
In another bowl, sift together the flour, cocoa powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
Bake for 10-12 minutes, or until the edges are set.
Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
For the frosting, beat together cream cheese and powdered sugar until smooth, then frost the cooled cookies.
Notes
For extra flavor, add a pinch of cinnamon to the dough.
