  • 8 corn tortillas

  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the shredded chicken, red enchilada sauce, cumin, garlic powder, onion powder, and cilantro. Season with salt and pepper.
  3. Heat the corn tortillas in a skillet to make them pliable.
  4. Fill each tortilla with the chicken mixture and roll them up.
  5. Place the rolled tortillas seam side down in a baking dish.
  6. Pour remaining enchilada sauce over the tortillas and sprinkle with cheese.
