  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chicken, black beans, corn, red bell pepper, avocado, cherry tomatoes, and cilantro.
