  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 4 large eggs
  • 1 cup pure pumpkin puree

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese until smooth. Add sugar, vanilla, spices, and blend until creamy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Spread half of the cheesecake batter over the crust.
  6. Gently fold pumpkin puree into the remaining batter and spread it over the plain batter.
  7. Use a knife to swirl the two batters.
  8. Bake for 50-60 minutes until the center is set.
  9. Allow to cool, then refrigerate for a few hours before serving.
