Pot Creamy Lasagna Soup

  • 1 pound ground turkey
  • 6 slices turkey bacon
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups uncooked lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. Add ground turkey to the same pot and brown.
  3. Sauté onions and garlic until translucent.
  4. Pour in chicken broth and bring to a boil.
  5. Add broken lasagna noodles and cook until al dente.
  6. Stir in ricotta and mozzarella cheese until melted and creamy.
  7. Season with Italian seasoning, salt, and pepper.
  8. Garnish with turkey bacon before serving.
