  • 1 pound boneless chicken breast, diced
  • 1 can pineapple chunks, drained
  • 1/2 cup bell pepper, chopped
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add garlic and ginger, stirring for about 1 minute.
  2. Add the chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the bell pepper and cook for another 2-3 minutes.
  4. Mix in the pineapple chunks and soy sauce, and let simmer for about 5 minutes.
  5. Serve the chicken mixture over the cooked rice.
