Perfect Bruschetta Chicken Pasta

This dish combines the freshness of bruschetta with the heartiness of pasta and juicy chicken.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 ounces pasta of your choice
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions; drain.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add chicken breasts to the skillet and cook until golden brown and cooked through, about 6-7 minutes on each side.
  4. Remove chicken, let it rest, then slice.
  5. In the same skillet, add balsamic vinegar, cherry tomatoes, and fresh basil. Cook for a few minutes until the tomatoes are slightly softened.
  6. Toss the cooked pasta with the tomato mixture and chicken slices. Season with salt and pepper.
  7. Serve warm, garnished with additional basil if desired.
