  • 1 cup butternut squash, cubed
  • 2 cups Brussels sprouts, halved
  • 2 tbsp olive oil
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, toss butternut squash and Brussels sprouts with olive oil, salt, and pepper.
  3. Roast for 25-30 minutes until tender.
  4. Cook pasta according to package instructions; drain and set aside.
  5. In a large bowl, combine roasted vegetables, pasta, feta, and walnuts.
  6. Drizzle with balsamic vinegar and toss to combine.
  7. Serve warm or at room temperature.
