Parmesan Crusted Tilapia with Roasted Red Pepper Sauce

  • 4 tilapia fillets
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jar (10 oz) roasted red peppers, drained and blended
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper.
  3. Dip each tilapia fillet in the beaten egg, then coat with the Parmesan mixture.
  4. Place coated fillets on a baking sheet and drizzle with olive oil.
  5. Bake for 15-20 minutes until golden and flaky.
  6. In a saucepan, combine blended roasted red peppers and heavy cream over medium heat, stirring until warmed through.
  7. Serve tilapia with the roasted red pepper sauce on top.

Notes

  • For extra crunch, broil the fillets for the last 2 minutes.
