- 4 chicken breasts
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 eggs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 2 cups mixed vegetables (e.g., bell peppers, zucchini)
- 2 tablespoons olive oil
- salt to taste

- Preheat the oven to 400°F (200°C).
- In a shallow bowl, mix the Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper.
- Dip each chicken breast in the beaten eggs, then coat with the Parmesan mixture.
- Place the coated chicken breasts on a sheet pan.
- In a bowl, toss the mixed vegetables with olive oil, salt, and pepper, then spread around the chicken on the sheet pan.
- Bake for about 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
