Parmesan Crusted Chicken Sheet Pan Dinner

A delicious and easy recipe for a weeknight family meal featuring Parmesan crusted chicken cooked on a sheet pan.

  • 4 chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 cups mixed vegetables (e.g., bell peppers, zucchini)
  • 2 tablespoons olive oil
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a shallow bowl, mix the Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper.
  3. Dip each chicken breast in the beaten eggs, then coat with the Parmesan mixture.
  4. Place the coated chicken breasts on a sheet pan.
  5. In a bowl, toss the mixed vegetables with olive oil, salt, and pepper, then spread around the chicken on the sheet pan.
  6. Bake for about 25-30 minutes or until the chicken is cooked through and the vegetables are tender.

Notes

  • For extra crunch, broil the chicken for the last 2-3 minutes.
