Overnight Blueberry French Toast Casserole

A delicious overnight blueberry French toast casserole that’s easy to prepare and perfect for breakfast gatherings.

  • 1 loaf French bread
  • 2 cups fresh blueberries
  • 6 large eggs
  • 2 cups milk
  • 1 tablespoon vanilla extract
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Cut the French bread into cubes and place in a greased baking dish.
  2. In a bowl, whisk together eggs, milk, vanilla extract, sugar, cinnamon, and salt.
  3. Pour the egg mixture over the bread cubes.
  4. Add the blueberries on top.
  5. Cover with plastic wrap and refrigerate overnight.
  6. Preheat the oven to 350°F (175°C).
  7. Bake uncovered for 45-50 minutes or until golden brown.
  8. Serve warm, optionally with syrup or powdered sugar.
