  • 2 cups blueberries
  • 6 large eggs
  • 2 cups whole milk
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar (optional for serving)

Instructions

  1. Cut the brioche bread into cubes and place half in a greased baking dish.
  2. Scatter the blueberries over the bread.
  3. Layer the remaining bread cubes on top of the blueberries.
  4. In a bowl, whisk together the eggs, milk, maple syrup, vanilla, cinnamon, and salt.
  5. Pour the egg mixture over the bread and blueberries, ensuring all pieces are soaked.
  6. Cover and refrigerate overnight.
  7. The next morning, preheat the oven to 350°F (175°C).
  8. Bake uncovered for 45-50 minutes or until golden and set.
  9. Serve with powdered sugar if desired.
