Outback Potato Soup

This creamy and hearty Outback Potato Soup recipe features turkey bacon and chicken ham for a rich flavor.

Ingredients

  • 4 cups diced potatoes
  • 1 cup chopped turkey bacon
  • 1 cup diced chicken ham
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/4 cup green onions, chopped

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add onion and garlic, sauté until translucent.
  3. Add diced potatoes and chicken broth, bring to a boil.
  4. Reduce heat, cover and simmer until potatoes are tender.
  5. Stir in heavy cream, salt, pepper, and paprika.
  6. Use an immersion blender to puree to desired consistency.
  7. Top with the reserved turkey bacon and green onions before serving.

Notes

  • For a thicker soup, puree more of the potatoes.
  • Feel free to add your favorite herbs for extra flavor.
