- 4 cups diced potatoes
- 1 cup chopped turkey bacon
- 1 cup diced chicken ham
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1/4 cup green onions, chopped
- In a large pot, cook turkey bacon until crispy. Remove and set aside.
- In the same pot, add onion and garlic, sauté until translucent.
- Add diced potatoes and chicken broth, bring to a boil.
- Reduce heat, cover and simmer until potatoes are tender.
- Stir in heavy cream, salt, pepper, and paprika.
- Use an immersion blender to puree to desired consistency.
- Top with the reserved turkey bacon and green onions before serving.
Notes
- For a thicker soup, puree more of the potatoes.
