4 cups diced potatoes
1 cup chopped turkey bacon
1 cup diced chicken ham
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
4 cups chicken broth
1 cup heavy cream
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery, and sauté until soft.
Add the potatoes, turkey bacon, and chicken ham, then pour in the chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes until potatoes are tender.
Stir in the heavy cream, salt, and pepper, and heat through. Serve hot.
Notes
For a thicker soup, mash some of the potatoes against the side of the pot.
Garnish with chopped parsley or green onions before serving.
