My Fave Birria Tacos

  • 2 pounds beef chuck roast
  • 1 pound beef shank
  • 1 tablespoon olive oil
  • 4 dried guajillo chiles
  • 2 dried ancho chiles
  • 4 cloves garlic
  • 1 onion, quartered
  • 2 bay leaves
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 corn tortillas
  • 1 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a large pot, heat olive oil over medium heat.
  3. Add the beef chuck roast and beef shank, lightly browning on each side.
  4. Remove the meat and set aside. In the same pot, add guajillo and ancho chiles, garlic, and onion; sauté until fragrant.
  5. Add the meat back into the pot, along with bay leaves, cumin, oregano, salt, and pepper.
  6. Cover with water and bring to a boil.
  7. Reduce heat, cover, and simmer for 2-3 hours until tender.
  8. Remove meat from the pot and shred it, then strain the broth.
  9. Dip tortillas in the broth, fill with shredded meat, and fold.
  10. Serve tacos garnished with cilantro and lime wedges.

Notes

  • For extra flavor, marinate the meat overnight.
  • Serve with side dishes like rice or beans.
