- 2 pounds beef chuck roast
- 1 pound beef shank
- 1 tablespoon olive oil
- 4 dried guajillo chiles
- 2 dried ancho chiles
- 4 cloves garlic
- 1 onion, quartered
- 2 bay leaves
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 corn tortillas
- 1 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- Preheat your oven to 325°F (165°C).
- In a large pot, heat olive oil over medium heat.
- Add the beef chuck roast and beef shank, lightly browning on each side.
- Remove the meat and set aside. In the same pot, add guajillo and ancho chiles, garlic, and onion; sauté until fragrant.
- Add the meat back into the pot, along with bay leaves, cumin, oregano, salt, and pepper.
- Cover with water and bring to a boil.
- Reduce heat, cover, and simmer for 2-3 hours until tender.
- Remove meat from the pot and shred it, then strain the broth.
- Dip tortillas in the broth, fill with shredded meat, and fold.
- Serve tacos garnished with cilantro and lime wedges.

- For extra flavor, marinate the meat overnight.
- Serve with side dishes like rice or beans.
