My Fave Birria Tacos are a delicious twist on a beloved classic, combining juicy, flavorful meat with a perfect blend of spices.

  • 2 pounds beef chuck roast
  • 1 pound lamb shoulder
  • 6 dried guajillo chilies
  • 3 dried ancho chilies
  • 1 onion, quartered
  • 4 cloves garlic
  • 2 bay leaves
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 4 cups beef broth
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, roast the dried chilies until fragrant.
