Mochi Ice Cream

  • 1 cup water
  • 1 pint ice cream of your choice
  • Cornstarch for dusting

Instructions

  1. In a microwave-safe bowl, mix glutinous rice flour and sugar.
  2. Add water to the bowl and stir until smooth.
  3. Cover the bowl with plastic wrap and microwave for 1 minute.
  4. Stir, then microwave for another minute.
  5. Let it cool slightly, then knead the mixture on a cornstarch-dusted surface.
  6. Roll into small circles, place a scoop of ice cream in the center, and wrap the dough around it.
  7. Freeze for at least 4 hours before serving.
