  • 4 slices turkey bacon

  • 1 cup cherry tomatoes, halved

  • 1/2 cup cilantro, chopped
  • 1/2 cup cotija cheese, crumbled
  • 1 tablespoon lime juice
  • 2 tablespoons mayonnaise
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni according to package instructions and set aside.
  2. In a skillet, cook the turkey bacon until crispy, then chop it into bite-sized pieces.
  3. In a large bowl, combine the cooked macaroni, grilled corn, cherry tomatoes, red onion, cilantro, and cotija cheese.
  4. Add the lime juice, mayonnaise, chili powder, and turkey bacon. Mix well to combine.
  5. Season with salt and pepper to taste.
  6. Serve chilled or at room temperature.
