  • 2 cups corn kernels (fresh or frozen)
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup cilantro, chopped
  • 1/4 cup mayonnaise
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the corn, red bell pepper, avocado, cotija cheese, and cilantro.
  3. In a small bowl, whisk together mayonnaise, lime juice, chili powder, salt, and pepper.
