8 oz pasta of choice
2 cups corn kernels (fresh or frozen)
1 red bell pepper, diced
1 avocado, diced
1/2 cup cotija cheese, crumbled
1/4 cup cilantro, chopped
1/4 cup mayonnaise
2 tbsp lime juice
1 tsp chili powder
Salt and pepper to taste
Instructions
Cook the pasta according to package instructions. Drain and let cool.
In a large bowl, combine the corn, red bell pepper, avocado, cotija cheese, and cilantro.
In a small bowl, whisk together mayonnaise, lime juice, chili powder, salt, and pepper.
Add the cooled pasta to the vegetable mixture and pour the dressing over the top. Toss to combine.
