Mexican Street Corn Pasta Salad

A vibrant and refreshing take on pasta salad, loaded with the flavors of Mexican street corn.

  • 2 cups corn, grilled
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions, then drain and let it cool.
  2. In a large bowl, combine the cooked pasta, grilled corn, red bell pepper, avocado, red onion, cilantro, and feta cheese.
  3. In a separate bowl, mix together the mayonnaise, lime juice, chili powder, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss gently to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
