2 boneless, skinless chicken breasts
8 ounces penne pasta
1 tablespoon olive oil
3 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1 teaspoon Italian seasoning
1/2 cup sun-dried tomatoes, chopped
1 cup spinach, fresh
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Instructions
Cook the penne pasta according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add chicken breasts and season with salt and pepper. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove and slice.
In the same skillet, add garlic and sauté for 1 minute.
Pour in the chicken broth and heavy cream, stirring to combine.
Add Italian seasoning, sun-dried tomatoes, and bring to a simmer.
Add spinach and cooked penne pasta. Toss to combine.
Stir in Parmesan cheese until melted and creamy.
Top with sliced chicken and serve warm.
Notes
For extra flavor, marinate the chicken in Italian dressing before cooking.
Serve with garlic bread and a side salad for a complete meal.
