  • 2 boneless, skinless chicken breasts
  • 8 ounces penne pasta
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup spinach, fresh
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chicken breasts and season with salt and pepper. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove and slice.
  3. In the same skillet, add garlic and sauté for 1 minute.
  4. Pour in the chicken broth and heavy cream, stirring to combine.
  5. Add Italian seasoning, sun-dried tomatoes, and bring to a simmer.
  6. Add spinach and cooked penne pasta. Toss to combine.
  7. Stir in Parmesan cheese until melted and creamy.
  8. Top with sliced chicken and serve warm.
