Loaded Potato Soup

A hearty and comforting loaded potato soup recipe with a twist of turkey bacon for added flavor.

Ingredients

  • 4 large potatoes
  • 1 cup turkey bacon, chopped
  • 1 onion, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste
  • 1 cup shredded cheese (optional)
  • 1/4 cup green onions, chopped (for garnish)

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté onion until translucent.
  3. Add diced potatoes and chicken broth; bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in cream, garlic powder, onion powder, salt, and pepper. Mash some of the potatoes for thickness.
  6. Top with cheese and crispy bacon before serving. Garnish with green onions.

Notes

  • For a vegetarian version, omit turkey bacon and use vegetable broth.
  • Feel free to add other toppings like sour cream or additional cheese.
