Lemon Coconut Cream Pie

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsweetened shredded coconut
  • ½ cup unsalted butter, melted
  • 1 cup sweetened condensed milk
  • ¾ cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • ½ cup toasted coconut for topping

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, shredded coconut, and melted butter. Press mixture into the bottom and up the sides of a pie dish.
  3. Bake the crust for 10 minutes, then remove from oven and let cool.
  4. In another bowl, whisk together sweetened condensed milk, lemon juice, and lemon zest. Pour filling into cooled crust.
  5. Bake for an additional 15 minutes. Remove from oven and allow to cool completely.
  6. Whip heavy cream with powdered sugar until soft peaks form. Spread over cooled pie.
  7. Garnish with toasted coconut. Chill in the refrigerator for at least 2 hours before serving.

  • Make sure to use fresh lemon juice for the best flavor.
  • You can prepare the pie a day in advance and keep it in the fridge.
