Lasagna Soup

  • 8 ounces lasagna noodles
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and crumble.
  2. In the same pot, sauté onion and garlic until translucent.
  3. Add crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Stir in lasagna noodles and cook until tender.
  5. Add diced chicken ham and crumble the turkey bacon back into the soup.
  6. Stir in ricotta cheese until melted and creamy.
  7. Serve hot, garnished with mozzarella cheese.

Notes

  • For a vegetarian option, omit turkey bacon and chicken ham.
  • Feel free to add your favorite vegetables.
