Italian Penicillin Soup

A delicious and comforting Italian soup made with turkey bacon and chicken ham.

Ingredients

  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cups kale, chopped
  • 1 cup carrots, sliced
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the turkey bacon and cook until crispy.
  3. Stir in the onion and garlic, sautéing until the onion is translucent.
  4. Add the chicken ham and cook for another 2 minutes.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add the kale, carrots, and Italian seasoning. Cook until the vegetables are tender.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!
