  • 1 cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup whole milk
  • ½ cup rainbow sprinkles

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix the flour, baking powder, and salt together.
  3. In another bowl, cream together the butter and sugar until fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract.
  6. Add the dry ingredients to the wet ingredients alternately with the milk, starting and ending with the flour mixture.
  7. Gently fold in the rainbow sprinkles.
  8. Divide the batter into the cupcake liners and bake for 18-20 minutes or until a toothpick comes out clean.
  9. Allow cooling before frosting.
