High-Protein Pancake Sausage Mini Muffins

These mini muffins combine the delicious flavors of pancakes and sausage, providing a high-protein breakfast option that’s perfect for busy mornings.

  • 1/2 cup rolled oats
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup low-fat milk
  • 2 large eggs
  • 1/2 cup cooked and crumbled sausage
  • 1 tablespoon maple syrup

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a bowl, mix the flour, oats, baking powder, and salt.
  3. In another bowl, whisk together the milk, eggs, and maple syrup.
  4. Combine the wet ingredients with the dry ingredients and stir until just mixed.
  5. Fold in the cooked sausage.
  6. Pour the batter into the mini muffin tin, filling each cup about 2/3 full.
  7. Bake for 15-18 minutes, or until golden brown and a toothpick comes out clean.
  8. Let cool for a few minutes before removing from the tin.
