High Protein Creamy Taco Soup

A delicious and nutritious creamy taco soup packed with high protein from turkey bacon and chicken ham.

Ingredients

  • 1 pound turkey bacon
  • 2 cups chicken ham, diced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced

Instructions

  1. Cook turkey bacon in a large pot until crispy, then remove and set aside.
  2. In the same pot, sauté onion and garlic until translucent.
  3. Add chicken ham, black beans, corn, and taco seasoning. Stir to combine.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat, stir in heavy cream, and allow to simmer for 10 minutes.
  6. Stir in cooked turkey bacon and cheese until melted and combined.
  7. Serve hot, garnished with additional cheese if desired.

Notes

  • This soup can be made ahead of time and flavors will deepen.
  • For added spice, consider adding chopped jalapeños.
