High Protein Cajun Chicken Pasta

A delicious twist on pasta that packs a protein punch.

Ingredients

  • 1 pound chicken breast, diced
  • 8 ounces whole wheat pasta
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup bell peppers, sliced
  • 1 cup onion, sliced
  • 2 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup spinach, chopped
  • ¼ cup parmesan cheese, grated

Instructions

  1. Cook pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add diced chicken and Cajun seasoning, cooking until chicken is no longer pink.
  4. Add bell peppers, onion, and garlic; sauté until vegetables are tender.
  5. Stir in chicken broth and spinach; bring to a simmer.
  6. Add cooked pasta to the skillet, tossing to combine.
  7. Sprinkle with parmesan cheese before serving.

Notes

  • Adjust spice level by adding more or less Cajun seasoning.
  • For a vegetarian version, substitute chicken with chickpeas or tofu.
