  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup long-grain white rice
  • 1 cup frozen peas
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, sauté until translucent.
  2. Add carrots and celery, cooking for about 5 minutes.
  3. Stir in thyme and rosemary.
  4. Pour in the chicken broth and bring to a boil.
  5. Add shredded chicken and rice, reduce heat, and simmer until rice is cooked.
  6. Add frozen peas and season with salt and pepper. Cook for an additional 5 minutes.
  7. Serve hot and enjoy!

Notes

  • For a creamier soup, add a splash of cream at the end.
  • Leftover turkey can be used instead of chicken.
