- 4 large potatoes, peeled and diced
- 1 cup cheddar cheese, shredded
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 slices turkey bacon, cooked and crumbled
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, heat olive oil over medium heat. Add onions and cook until translucent.
- Stir in garlic and thyme, cooking for 1 minute more.
- Add diced potatoes and broth; bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Pureé the soup with an immersion blender until smooth.
- Stir in heavy cream and cheddar cheese until melted and combined.
- Top with crumbled turkey bacon before serving.
