Hearty Cheddar Garlic Herb Potato Soup

A comforting and delicious potato soup infused with cheddar, garlic, and herbs, topped with crispy turkey bacon.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup cheddar cheese, shredded
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 slices turkey bacon, cooked and crumbled
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and cook until translucent.
  2. Stir in garlic and thyme, cooking for 1 minute more.
  3. Add diced potatoes and broth; bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  5. Pureé the soup with an immersion blender until smooth.
  6. Stir in heavy cream and cheddar cheese until melted and combined.
  7. Top with crumbled turkey bacon before serving.

Notes

  • Adjust seasoning to taste.
  • For extra creaminess, use more cream or cheese.
