Healthy Fall Harvest Pasta Salad

A nutritious pasta salad perfect for the fall season, featuring turkey bacon and chicken ham.

Ingredients

  • 8 ounces whole wheat pasta
  • 4 slices turkey bacon
  • 1 cup cooked chicken ham, diced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 2 cups spinach leaves
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste

Instructions

  1. Cook the whole wheat pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook the turkey bacon until crisp. Remove and chop.
  3. In a large bowl, combine the cooked pasta, turkey bacon, chicken ham, red bell pepper, cherry tomatoes, red onion, and spinach.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve immediately or chill for 30 minutes to allow flavors to meld.
