Healthy Chicken Tortilla Soup

A comforting and nutritious twist on classic tortilla soup using healthy ingredients like chicken and turkey bacon.

Ingredients

  • 1 pound chicken breast, cooked and shredded
  • 4 strips turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 cup corn, frozen or fresh
  • 1 bell pepper, diced
  • 2 cups kale, chopped
  • 1 lime, juiced
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onions and garlic, sauté until translucent.
  3. Add the chicken broth, tomatoes, black beans, diced bell pepper, and corn. Stir to combine.
  4. Add the cooked chicken, kale, cumin, chili powder, and season with salt and pepper.
  5. Bring the soup to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in lime juice and cilantro before serving.
  7. Top with crispy turkey bacon for garnish.

Notes

  • This soup can be made ahead of time and tastes even better the next day.
  • Feel free to add your favorite toppings such as avocado, cheese, or tortilla strips.
