- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups low-sodium chicken broth
- 2 cups cooked chicken, shredded
- 1 cup frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup almond milk
- 1 tablespoon cornstarch mixed with 2 tablespoons water to thicken
